Elderberry

Common Name: Elderberry
Latin Name: Sambucus Nigra

Elderberry is a dark purple berry that grows on the European Elder bush. It is rich in antioxidants such as anthocyanosides and have immune-stimulating, anti-inflammatory, and anti-microbial properties. It has a powerful effect on cold and flu symptoms if taken within the first 48 hours and can shorten the length of a cold or flu.

Elderberry is not recommended for pregnant women, or nursing mothers and is cautioned for children. Over-consumption or consuming raw elderberries can cause adverse reactions such as nausea and vomiting. Elderberries must be cooked before consuming.

Preparation

To prepare Elderberry syrup:

100 g of Elderberries : 1 to 2 quarts of water

Soak the berries in a pot of cold water for about 30 minutes. Bring to a boil and then simmer uncovered for another 30-45 minutes. Stir frequently. Reduce to 2 cups (cook longer or add more water if necessary). Stir in about 1 to 1-1/2 cup of honey and boil again until thick.

Storage: Allow to cool and pour in prepared bottles, store in refrigerator.

Suggested dosage – To reduce cold and flu symptoms, take 1 tablespoon (15 mL) 4 times a day.
